How to eat delicious meat

  1. Sprinkle salt and pepper over the meat and place on a griddle(grill) gently.
  2. When the bottom turns brown, a little fats comes off the surface, at that moment the meat is slightly swollen, quickly flip-over.
     Point:
    Do not flip-over repeatedly. After flipping, scorch slightly on the other side. After 5-6 seconds, you will see a little red. That means it is ready to eat.
     Point:
    Please cook each portion at a time, cooking carefully. You can use Hiro’s special sauce.
  3. You should marinate before cooking. Please wipe excess oil off the grill with a paper towel.

  1. In a hot-pot, cook water to 70-80 degrees Celsius.
     Point:
    If you see bubbles appear, it will be over 90 degrees.

  4. Check that the surface is brown, then flip over. Press a finger into the meat to check that it’s cooked to your desired taste.
     Point:
    If it shows strong elasticity it is well done. Be careful not to overcook.

    Kyoto-style means cooking and eating the meat first.
  6. Be careful not to overcook and add too much seasoning.
